Products and storage

Manufacturing

All of our products are made by hand by our chocolatiers, in keeping with traditional craftsmanship, in our Workshop in Brussels. The manufacturing processes are subject to the most stringent sanitary standards and constant oversight. We have developed our own system of internal controls, following the rigorous provisions of HACCP certification to the letter, and are also ISO 22000 certified.

Ingredients and allergens

All of our products are produced in a Workshop where the following allergens are used: peanuts, tree nuts, gluten, milk, eggs and soy. Almonds, hazelnuts, and walnuts are contained in numerous products. Certain chocolates are manufactured with ingredients that contain gluten and may contain traces of gluten. Dairy products are also used in the production of our chocolates. If you have any questions, please email us at export@mary.be.

Cocoa butter

All of our chocolates contain 100% pure cocoa butter.

Soy lecithin

Our products contain soy lecithin. This natural binder helps ingredients mix more smoothly and does not affect the taste of our products.

Alcohol-free chocolates

Unless otherwise stated in the product description, our chocolate offerings do not contain alcohol.

Organic chocolate

Our suppliers must meet a range of rigorous requirements to guarantee the impeccable quality of our raw ingredients. The “organic” label is not currently a selection criterion, since our first concern is to seek a balance of flavors and textures.

Lactose-free chocolates

A few of our chocolates do not contain lactose. This feature is mentioned in the description on the product page. However, our products are produced in a Workshop where milk is used and may therefore contain traces thereof.

Gluten-free chocolates

A few of our chocolates do not contain gluten. This feature is mentioned in the description on the product page. However, our products are produced in a Workshop where gluten is used and may therefore contain traces thereof.

Kosher/halal chocolate

Our products are not certified kosher or halal.

Whitening

A light white stain that seems “fatty” may appear on the surface of chocolates; this is natural and is a result of recrystallizing fats, a process that may be slowed down by appropriate storage practices.

Storage

A best-by date is given on each of our products. We encourage you to consume the product before that date. Our chocolates are best stored at 15-18 degrees Celsius (59-65 degrees Fahrenheit), in a cool and dry place away from light and strong odors. Otherwise, they may be stored in your refrigerator’s crisper, provided that they are still in their original packaging and are placed in a completely sealed plastic bag. In such cases, we recommend removing the chocolates from the refrigerator at least half an hour before eating.
